AppStoreapps.com is a great resource for free educational apps.  Checkout their Top 50 Free Educational Apps.

AppAnnie is a site that trends daily.  It is much like the Billboard charts and is updated daily with both the top free and paid apps.

Explain Everything is a whiteboard app that allows you to capture what you are doing in the app, as well as the audio from what you are talking about.

Zite is a magazine app that allows you to pull in the content you want to see. You choose from hundreds of categories and it delivers the news you want

Flipboard  is similar to Zite except you can be more exact as to where you pull content from. For example your Twitter, FaceBook and RSS feeds.

Splashtop Whiteboard allows you to connect to and control your Mac or PC from the iPad. In addition, it has markup tools to allow you to annotate what is on your computer screen from the iPad.
